Pretty amazing to be in a room filled with cured pork.  Many have dreamed of this experience, but few experience it.

The white mold that developes is perfectly edible.  In Italy they let it develop a green & yellow hue, but Americans tend to be squemish about that sort of business.

The mold begins to develop.  For some varieties, they wash it off, others get to keep their coat.
Yes, that is my mother holding a string of salame.
