Learned how to "crack" an 80 Lb wheel of Parmesano Reggiano

Here’s a short picture diary of me learning to cut an 80 Lb wheel of Parmesano Reggiano cheese 
(aged 24+ months in Italy).

The smell of a freshly cracked wheel is intoxicating… looks like I’ll be sharing some with the family for Thanksgiving.

The truth: I cut my finger while learning to crack this monster – those tools are new and SHARP!

We divided the cheese between our 5 stores, so everyone got a portion to sell for the holidays.  Anyone who buys this will surely be happy they did!  It’s delish.
